Creole Okra And Tomatoes

Ingredients:


1/2 cup butter or margarine

1 medium Onion -- large, minced

1/2 medium green bell pepper -- diced

1 quart okra -- fresh, sliced/rinsed

4 medium tomatoes -- fresh, coarsely chopped

1 teaspoon salt to taste

1 teaspoon black pepper to taste
 

Preparation / Directions:


1. Melt butter in large skillet; add onion and sauté over medium heat until soft. 2. Add bell pepper, okra and tomatoes; season to taste. 3. Reduce heat; cover and simmer 20 minutes, stirring occasionally. NOTE: If desired, add fresh corn kernels. Makes a terrific fresh-tasting vegetable medley.
