Creole Mushrooms

Ingredients:


1/4 cup red wine

2 cloves garlic -- minced

1 teaspoon oregano

1 medium onion -- diced

1 medium green bell pepper -- diced

1 medium jalapeno pepper -- chopped

1 medium tomato -- diced

1/2 pound whole button mushrooms

1 tablespoon tomato paste
 

Preparation / Directions:


Simmer the garlic, oregano and onion in the wine for 5 minutes. Add diced bell pepper and the jalapeno pepper. Cook, stirring frequently, for 2 minutes. Add tomatoes and cook for another 5 minutes. Finally add the mushrooms and the tomato paste. Cook until the sauce is thickened. Serve hot.
