Breaded Cutlets

Ingredients:


1 large egg

1 tablespoon water

2 teaspoons minced chives

1/4 cup flour

1 cup soft bread crumbs

6 slices lemon wedges -- (optional)

2 tablespoons Dijon style mustard

6 slices cooked turkey -- chicken or roast beef or pork roast.

1 Cup cooking oil
 

Preparation / Directions:


Cut meat slices 1/4" thick. Beat egg, mustard, water and chives together. Dredge meat slices in flour, dip in egg mixture, coat with crumbs. Fry meat slices in 1/4" hot cooking oil in skillet until golden on both sides, turning once. Add more oil, if needed. Serve with lemon wedges.
