Apple Chunk Cake |

Ingredients:
2 cups peeled -- cubed apples |
1 cup molasses |
2 large eggs -- beaten |
1 cup sugar |
1 cup melted shortening |
1 cup milk |
4 cups sifted flour |
2 teaspoons baking soda |
1 teaspoon salt |
1 teaspoon cinnamon |
1 teaspoon ground cloves |
1 tablespoon vanilla |
1 tablespoon lemon extract |
1 cup raisins or walnuts |

Preparation / Directions:
Combine apples and molasses in a saucepan. Bring to a boil and cook 5 minutes on medium heat. Cool slightly. Add all remaining ingredients and mix well. Divide ingredients into 2 9-inch greased cake pans. Bake at 350ΓΈ for 45 - 50 minutes. Slice and serve. Makes 16 - 20 servings. Wonderful with vanilla ice cream or whipped topping!
