Carrot Cake

Ingredients:


3 tablespoons unsalted butter

1/2 cup brown sugar

3 medium carrots -- grated

1 large egg

1 cup flour

1 teaspoon baking powder

1 medium orange plus extra for garnish -- zest of

1 medium orange -- juice of

1/3 cup chopped walnuts

1/3 cup raisins

1/2 cup sour cream

1/2 cup plain yogurt

2 tablespoons powdered sugar

2 tablespoons dark rum

1 teaspoon cinnamon

1 teaspoon orange zest for garnish
 

Preparation / Directions:


Preheat oven to 400. Melt butter and add egg, brown sugar, and grated carrots to mixing bowl. Mix well. Add flour, baking powder, orange juice and zest, walnuts and raisins. Mix thoroughly until dough forms. Pour mixture into buttered baking dish and spread across pan. Let bake 12 minutes. Sauce: To sour cream, add powdered sugar and fold in yogurt and rum. Garnish cake with rum sauce, orange zest, and cinnamon.
