Choc Nut Sweet Potato Cake

Ingredients:


2 cups sweet potato meat

3 cups flour

1 1/2 cups sugar

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon cinnamon

1/4 teaspoon clove

1 teaspoon salt

1 1/2 cups vegetable oil

1 teaspoon ginger

1/4 teaspoon nutmeg

4 large eggs

1 teaspoon vanilla

1 cup nuts

4 ounces semisweet chocolate chips -- melted
 

Preparation / Directions:


Bake 2 pounds of sweet potatoes. Mix all ingredients except chocolate. Pour chocolate into 1/4 the batter. Alternate chocolate pumpkin batter with regular in a tube pan. Slice knife through batter to swirl. Bake 350 for 1 hour 10 minutes.
