Chocolate/Oatmeal/Applesauce Cake

Ingredients:


1 1/2 cups boiling water

1 cup oatmeal -- quick-cooking

1 cup brown sugar

1 cup sugar -- (white)

1 1/2 cups flour

2 whole egg whites -- or 2 eggs

1 tablespoon margarine -- or 1/2c shortening

1/2 cup applesauce

1 teaspoon baking soda

1/2 teaspoon salt

1 tablespoon cocoa

1/2 cup chocolate chips -- or carob chips
 

Preparation / Directions:


Pour the boiling water over the oatmeal and let stand for 10 minutes. Then add the other ingredients. Stir well and pour into a "greased" and floured 9 x 13" cake pan and sprinkle additional 1/2 cup of chocolate chips on top. (add 1/2 cup of chopped nuts if fat isn't a concern) Bake in a 350 degree preheated oven for 35-45 minutes or until "done". Can also use two 8-inch square cake pans, but adjust baking tim
