Date Oatmeal Cake

Ingredients:


1 cup boiling water

2 cups old fashioned oatmeal

3/4 cup unsalted butter

1 cup chopped walnuts

1 cup brown sugar

1 teaspoon vanilla extract

2 large eggs

1 1/2 cups chopped dates

1/2 cup all purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

2 teaspoons ground cinnamon
 

Preparation / Directions:


Preheat oven to 350°F. Pour boiling water over oatmeal. Mix well and cool slightly. Stir in next 6 ingredients. Combine remaining ingredients in a separate bowl. Stir oatmeal mixture into dry ingredients and mix thoroughly. Pour into a buttered 8 inch baking dish and bake 35 minutes.
