Happy Birthday Coconut Cake

Ingredients:


2 1/4 cups flour -- sifted

2 1/2 teaspoons baking powder

1 1/2 cups sugar

1 teaspoon salt

1/4 cup butter

1/2 cup milk

1 teaspoon orange rind -- grated

1/2 teaspoon vanilla extract

1 large egg

1/4 cup milk

2 large eggs

1/2 Cup shredded coconut
 

Preparation / Directions:


Preheat oven to 375 F. Grease and flour two 9 inch layer cake pans. Sift first four ingredients into a mixer bowl. Add softened butter, 1/2 cup milk, orange rind, vanilla and one unbeaten egg. Beat well 2 minutes at low speed. Add 1/4 cup milk and 2 unbeaten eggs. Pour into prepared pans. Bake 25 to 30 minutes. Cool. Frostwith Fluffy Seven Minute Frosting and top with coconut.
