Lemon Meringue Cake and Strawberries

Ingredients:


2 Cups sliced strawberries

1/4 Cup sugar

1 1/4 Cups flour

1 cup sugar

1/4 Cup soft margarine

1/2 Cup milk (skim or 1%)

1 1/2 teaspoon baking powder

1 1/2 teaspoon lemon peel

1/4 teaspoon salt

1 teaspoon vanilla

2 large egg whites

1/3 Cup sugar
 

Preparation / Directions:


Combine 2 cups strawberries and 1/4 cup sugar. Set aside. Beat together next 7 ingrenients. Spray a 9x9x2-inch pan with Pam and pour in mixture. Bake @ 350 degrees for 25-30 minutes. Beat egg whites. Add vanilla and 1/3 cup sugar to make meringue. Spred over top of cake and bake 10 min., longer. Cool, then top with berries.
