Mocha Oatmeal Cake

Ingredients:


1 1/3 cups very hot coffee

1 cup oats -- uncooked

3/4 cup butter

1 cup brown sugar

1 cup white sugar

2 large eggs

1 1/2 teaspoons vanilla

2 cups flour

1 1/4 teaspoons baking soda

3 tablespoons cocoa

--frosting

1 1/2 tablespoons butter

1 cup confectioners sugar

1 1/2 tablespoons coffee

1/2 teaspoon vanilla
 

Preparation / Directions:


Place the oats in a bowl and pour the hot coffee over them. Cover and let sit for 20 minutes or so. Cream the butter and sugars. Add eggs and vanilla. Stir the coffee-oats mixture into the butter-sugar-eggs mixture. Add flour, baking soda, and cocoa. Pour into greased and floured 10-inch tube pan and bake 50 to 55 minutes at 350. Make a frosting by combining butter, confectioner's sugar, coffee and vanilla. Drizzle frosting over the cake after removing it from the pan and allowing it to coo
