Mom's Banana Cake Special

Ingredients:


2 1/2 cups flour

1 1/2 teaspoons baking powder

3/4 teaspoon salt

1 1/2 teaspoons cinnamon*

3/4 teaspoon cloves*

1/4 teaspoon nutmeg*

3 medium bananas -- 1 cup (3 to 4)

3/4 cup butter

1 1/2 cups sugar

2 large eggs

1 cup sour milk -- or buttermilk

---BROILED FROSTING---

3/4 cup pecans

4 1/2 tablespoons butter or margarine

3/4 cup brown sugar -- packed

1 1/2 tablespoons condensed milk -- not sweetened
 

Preparation / Directions:


Use ripe bananas, if possible. Sift dry ingredients together. Mash and measure bananas. Cream butter and sugar. Add eggs and beat well. Add the dry ingredients alternately with milk to the creamed mixture. Don't overbeat. Mix in mashed bananas thoroughly. Pour into greased and floured 9 x12" pan. Bake at 350 deg. for 40-45 minutes, or until done. Frost with "Broiled Frosting" while still hot, or serve plain or with whipped topping. Spices may be omitted and 1 1/2 tsp. vanilla substituted. (We like the vanilla better) BROILED FROSTING: Mix together and spread on hot baked cake: Place under broiler until mixture is bubbly, 1 1/2 -2 minutes, Watch carefully. Don't scorch.
