Whole Wheat Apple Cake

Ingredients:


4 cups apples -- peeled and diced

2 cups sugar

1 cup oil

2 teaspoons baking soda

1 teaspoon salt

2 large eggs

2 cups whole wheat flour

1 cup nuts -- optional

1 cup raisins -- optional

---CREAM CHEESE FROSTING---

2 cups powdered sugar

1/4 cup butter or margarine -- softened

1 teaspoon vanilla

4 ounces cream cheese -- softened
 

Preparation / Directions:


Place diced apples in bowl. Add sugar, oil, vanilla, soda, salt, and eggs. Mix thoroughly. Sift dry ingredients together. Then add to wet mixture. Pour into greased 9 X 13 pan. Bake at 350*F for 60 minutes or until cake shrinks from sides of pan. Frost with Cream Cheese Frosting. (Mix all ingredients together until smooth.)
