Potato Candy

Ingredients:


3/4 Cup potatoes -- mashed/cold

4 Cup powdered sugar -- sifted

4 Cup coconut -- chopped

1 1/2 teaspoons vanilla

1/2 teaspoon salt

4 ounces baking chocolate -- melted
 

Preparation / Directions:


In a mixing bowl, combine potatoes, sugar, coconut, vanilla, and salt until blended. Press into one large or two small pans, so candy will be 1/2" thick. Melt chocolate in double boiler. Pour melted chocolate on top of candy, cool, and cut into squares.
