Maple Glazed Carrots

Ingredients:


1 1/2 pounds whole baby carrots

3 tablespoons butter

1/2 cup maple syrup

1/2 teaspoon salt

2 tablespoons chopped parsley or mint
 

Preparation / Directions:


Cook carrots in boiling, salted water until almost tender. Drain, reserving 1/4 c liquid. Melt butter and roll the vcarrots in it. Add reserved liquid, maple syrup and salt. Cook uncovered, until liquid is thickened and carrots are tender - about 10 minutes. Sprinkle with parsley or mint.
