Colorful Rice Casserole

Ingredients:


1 spray Vegetable cooking spray

1 1/2 pounds Zucchini thinly sliced

3/4 cup chopped green onion

1 can corn (17 oz.) -- drained

1 can tomatoes (16 oz.) -- drained and chopped

3 cups cooked regular rice or brown rice

1/2 teaspoon salt

1/4 teaspoon pepper

1/4 cup chopped fresh parsley

1/4 teaspoon dried whole oregano
 

Preparation / Directions:


Coat an electric skillet with cooking spray; heat to 350 F until hot. Add zucchini and onion; saute about 5 minutes or until crisp-tender. Stir in remaining ingredients; cover, reduce heat, and simmer 15 minutes.
