Fruit Casserole

Ingredients:


1 can peach halves

1 can pear halves

1 can apricot halves

1 can pineapple chunks

1 jar red apple rings

1/2 stick butter -- melted

2 tablespoons flour

1/2 cup brown sugar

1 cup cooking sherry

1 teaspoon curry

1/4 teaspoon cinnamon

1/4 teaspoon cloves
 

Preparation / Directions:


Drain fruit and reserve juice. Melt butter in saucepan. When almost sizzling, add flour and stir until completely blended with butter. Add 1 1/2 cups combined juices from the fruit. Cook and stir with wire whisk until thick. Add brown sugar, sherry, and spices. Arrange all fruit, except apple rings, in large casserole; pour sauce over all, and put apple rings on top. Bake at 300 degrees for 25 minutes. May make a day ahead if desired.
