Malcolm's Red Cabbage

Ingredients:


1 small onion -- chopped

2 tablespoons oil

1/2 large cooking apple -- chopped

1 slice streaky bacon -- chopped

1/2 large red cabbage -- coarse shredded

2 cups beef stock

3 tablespoons vinegar

2 whole cloves

1 teaspoon caraway seed

1 teaspoon salt and pepper
 

Preparation / Directions:


In a large casserole, fry onion in butter/oil till soft. Add bacon and apple and fry a couple of minutes more. Stir in cabbage and then add enough beef stock almost to cover cabbage. Now add vinegar and seasonings, grinding the caraway lightly, if you don't much like the flavour, and stir together again. Bring to boil, cover tightly and put into pre-heated 325ΓΈ oven for several hours, until really tende
