Sweet Potato Casserole 6

Ingredients:


3 cups sweet potatoes -- cooked and mashed

1/2 cup skim milk

1/2 cup egg substitute

1/4 cup firmly packed brown sugar

1 tablespoon butter or margarine -- melted

1 teaspoon vanilla

1/2 teaspoon salt

1 spray vegetable cooking spray

1 cup lowfat granola -- w/o raisins

1/2 cup chopped pecans -- toasted

1/4 cup firmly packed brown sugar

1 tablespoon butter or margarine -- melted
 

Preparation / Directions:


Combine first 7 ingredients in a bowl; beat at medium speed of an electric mixer until blended. Spoon mixture in to an 8 inch square baking dish coated with cooking spray. Combine granola and next 2 ingredients; stir well. Sprinkle over casserole and drizzle with butter. Bake at 350 oF for 25 minutes.
