Sweet Potato Souffle

Ingredients:


6 medium Sweet potatoes

1 can Crushed pineapple -- , drained

1/4 cup Margarine -- (1/2 stick melted)

1/4 cup Milk

1/2 cup Sugar

3/4 cup Pecan pieces

1 packages Miniature marshmallows
 

Preparation / Directions:


Boil potatoes until tender, then peel. Beat warm potatoes in mixer for 2 minutes or until smooth. Add other ingredients except marshmallows. Stir well. Pour into greased baking dish. Top with small marshmallows. Bake in 325 deg. F oven until souffle is hot and marshmallows are golden brown.
