Corn Pudding from Maine

Ingredients:


17 ounces creamed corn, low calorie

2 large eggs -- lightly beaten

1/2 Cup skim milk

1 teaspoon salt and pepper to taste

2 tablespoons margarine -- melted

2 tablespoons red pepper -- chopped

2 tablespoons onion -- chopped

15 pieces Ritz crackers -- crushed
 

Preparation / Directions:


Mix all ingredients except 1/4 cup of the crushed crackers. Pour into 1 1/2 quart buttered casserole. Sprinkle with reserved cracker crumbs. Bake in preheated 350 deg F oven for 1 hour or until center is firm.
