No Tomato Beef Chili

Ingredients:


3 pounds lean beef -- diced

1 quart water

3 teaspoons salt

5 cloves garlic

1 teaspoon marjoram

1 tablespoons sugar

---THICKENER

6 tablespoons corn meal

3 tablespoons flour

1/4 cup liquid shortening

8 tablespoons chili pods or chili powder

1 teaspoon ground cumin

1 teaspoon red pepper

3 tablespoons paprika

1 cup water
 

Preparation / Directions:


1. Heat oil in large pot, add meat and sear over high heat. Stir constantly until meat is gray, but not brown. Add water and cover, cook over low fire for 1 1/2 hrs. 2. Add remaining ingredients, except thickening, and cook at a bubbling simmer 30 min. 3. Mix thickening ingredients together, add to chili mixture, cook about 5 min., stirring to prevent sticking. More water may be added for desired consistency. Notes: For milder flavor, cut chili powder and red pepper in half, but add 2 more tbs. paprika for color.
