I picked up this chile in portugal and have played with it ever since. It is from memory so if needed add things if necessary | ||||||||||||||||||||
Ingredients:

Preparation / Directions:This takes a large stock pot to prepare. We generally use a 20 quart stock pot.
The black beans will have to be prepared by boiling them in water till soft.
Fry the meat in a frying pan until it is cooked thouroughly cutting into smaller pieces. The meat should be browned, and be very small.
chop up the garlic, onion, carrot and all of your peppers. Cover the bottom of the stock pot with oil and add the chopped vegetables to the bottom with the cumin, and oregano and fry in the oil for three minutes on medium heat. Then add the meat with the grease to the stock pot. Stir until mixed thouroughly with the vegetables.
Sautee the mushrooms and then add to the stock pot and stir them into the chile.
Add tomato sauce to the chile.
Then add the beans.
Stir together and add the brown sugar.
Now season to your tastes
