Shrimp And Bean Curd Dumplings |

Ingredients:
12 ounces shrimp -- shelled, deveined |
1/2 pound bean curd -- firm, diced |
5 medium eggs |
1 tablespoon garlic -- minced |
2 tablespoons ginger root -- minced |
2 teaspoons salt |
1 teaspoon white pepper |

Preparation / Directions:
Chop shrimp. Beat eggs. Place shrimp in glass bowl and add other ingredients and mix well but do not break up bean curd.
Make dough using the Dim Sum Dumpling Dough (Boiling Water Method) recipe. Or buy dumpling or wan ton skins.
Place about 1 teaspoon of filling in the center of each dumpling. Fold up so the top is uncovered.
Steam for 10 minutes.
Serve with favorite dipping sauces.
Makes 50 dumplings.
