Cranberry Chipotle Compote

Ingredients:


1 tablespoon vegetable oil

3 medium apples -- peel, core, dice

3 medium pears -- peel, core, dice

1/3 cup raisins -- seedless

1/4 cup grand marnier

1 pound fresh cranberries

4 ounces chipotle peppers in adobo sauce -- chopped

2 teaspoons cinnamon

1 cup sugar

1/2 medium an orange -- zest of

1/2 cup fresh squeezed orange juice

1/2 teaspoon nutmeg

1/4 cup grand marnier
 

Preparation / Directions:


Heat oil over medium heat in a large saucepan. Add apples, pears and raisins. Saute 3 - 5 minutes, or until soft. Add 1/4 cup Grand Marnier and deglaze pan. Add cranberries, chipotles, cinnamon, sugar, orange zest and juice. Reduce heat to low. Stir and simmer 40 - - 45 minutes, or until it begins to thicken. Stir in the nutmeg and second 1/4 cup Grand Marnier. Refrigerate until ready to serve. Makes about 1 quart.
