In France, mustard is to meat what butter is to bread. The best way to develop a connoisseur's appreciation for Dijon Mustard is to use it as a condiment with simple dishes such as ham or grilled chicken. Or try including it as a key ingredient in a simple mustard sauce.
If you're preparing fish, save calories by brushing it with Dijon Mustard instead of butter.
You can create your own special flavored mustards by adding herbs, aromatic vegetables or flavorings such as lemon to taste. For example, add tarragon, basil, dill weed, minced shallots or garlic to Dijon Mustard to complement any meal.
It should be noted that heat reduces the pungency in mustard, but not the flavor. So if sharpness is desired in a cooked dish, mustard should be added only at the last minute.
For a Dijon Omelette or Dijon Scrambled Eggs, add 1 to 2 teaspoons Dijon Mustard for every two eggs.
Mix approximately 2-3 tablespoons of Dijon Mustard with some plum preserve and brush on a juicy charcoaled hamburger. Or mix some with chutney and do the same.
Mix 1 tablespoon Dijon Mustard with 3 ounces of cream cheese. Blend well. Fill celery Sprinkle with paprika, minced parsley or Parmesan cheese.
Mix Dijon Mustard to taste with mayonnaise and a teaspoon of sherry and serve with crab meat, lobster shrimp or scallops. Proportions can range from 1 tablespoon Dijon Mustard to 1 cup mayonnaise to equal quantities of each. Some chopped parsley or a few chopped chives give it added flavor.
