Boiled Crawfish

Ingredients:


30 quarts water -- (30 to 32)

2 packages crab boil

10 small onions -- (cleaned and quartered)

6 medium lemons quartered

3 tablespoons cayenne pepper

25 pounds live crawfish purged

3 pounds red potatoes

12 medium corn ears

6 cloves garlic -- peeled (6 to 10)

1/4 cup salt
 

Preparation / Directions:


NOTE: To purge (clean) crawfish, pour them into a large wash tub or similar container (the bath tub works Well). Fill with water to cover crawfish and pour 3/4 box of salt, stir and let stand for about 1 hour. Drain and rince Crawfish. In a 40 -48 quart pot filled about 2/3 full with water, bring to a boil and add packaged crab boil, onions, lemons and pepper. Bring back to a roaring boil,then add purged crawfish, potatoes, corn, and garlic. Bring back to a boil. Line long table with newspapers, and have several trashbags taped to the sides of the table (to slide crawfish shells into the trash easlily). Have LOTS of iced tea, water, soda, and lemonade handy. Place rolls of paper towels on the table also! After boiling for 12 minutes, remove from heat, add salt and let stand for 5 minutes. Drain and pour onto table and eat.
