Garbanzos and Couscous

Ingredients:


1 small onion -- chopped

3 medium carrots -- chopped

1 can diced tomatoes -- (14 1/2 ounce)

1 can garbanzo beans -- (15 ounce) drained

1 cup reduced-sodium chicken broth

3 cloves garlic -- mined

1/4 teaspoon groun nutmeg

1/4 teaspoon ground cinnamon

1 teaspoon ground cumin

1/2 teaspoon turmeric

1/4 teaspoon cayenne pepper

1 1/2 cups cooked couscous
 

Preparation / Directions:


This recipe is for all you vegetarians out there! Combine all ingredients except couscous in Crock-Pot. Mix thoroughly. Cover; cook on Low 8 to 10 hours (High: 3 to 4 hours). Add cooked couscous during last 15 minutes of cooking.
