Ingredients:


3 large eggs

1 medium Onion

1 medium chile -- green or

1 medium chile -- red

1 bunch curry leaf sprigs

1/2 teaspoon salt

1/2 teaspoon pepper

2 teaspoons flour -- corn

25 milliliters oil
 

Preparation / Directions:


Beat the eggs. Chop the onion, chile and curry leaves. Mix the onion, chile, curry leaves, salt, pep- per and Flour, Corn into the eggs. Heat the oil and when hot pour in half the omelet mixture. Cook for a couple of minutes, carefully turn over and cook the other side. Make another omelet with the remaining mixture.
