Ingredients:
1/2 cup water |
4 tablespoons sugar |
4 bunches sprigs mint -- leaves removed from |
1 stalk yield about 20 mint leaves |
2 cups packed diced fresh pineapple |
4 tablespoons light rum |

Preparation / Directions:
Combine water, sugar and mint leaves in a small pan. Simmer ten minutes and then cool completely. Stir in pineapple and rum. Process until pulpy in a blender or food processor. Process in an ice cream freezer according to manufacturer's instruction
