Basic Pumpkin Souffle

Ingredients:


1 cup cooked pumpkin

1/2 teaspoon cinnamon

1/2 cup brown sugar

3 large egg whites

1/8 teaspoon salt
 

Preparation / Directions:


To pumpkin, add cinnamon and sugar. Mix well. Beat egg whites until stiff. Add salt. Fold into pumpkin mixture. Fill greased baking dish or individual molds 2/3 full and set in pan of hot water. Bake at 350 degrees about 40 minutes for large mold and 25 - 30 minutes for individual molds.
