Berry Honey

Ingredients:


1 cup frozen raspberries -- or other berries

1 1/2 cups honey

1/4 cup water

1 teaspoon grated lemon rind -- optional
 

Preparation / Directions:


Combine the berries, 1/2 cup of the honey, and water in a small saucepan. Simmer over low heat for about 15 minutes. Stir in the balance of the honey. Allow to cool, then stir in optional lemon rind. Makes about 2 1/2 cups. Lee Bailey's Note: It's really better to use frozen berries for this becasue they're usually cheaper. Besides, you cook them, and the flavor, not the texture, is what c
