Preparation / Directions:This recipe takes advantage of seasonal citrus and makes an unusual hostess
or party gift. Bundle the strips in cellophane gift bags, and tie with a
pretty ribbon or raffia.
Peel first 3 ingredients, reserving sections for another use. Scrape off
and discard white portion of rind; cut rind into thin strips. Place in a
large saucepan. Add 6 cups cold water; bring to a boil, and boil 10
minutes. Drain and rinse. Return strips to pan. Add remaining 6 cups water;
bring to a boil, and boil 10 minutes. Drain and rinse. Bring 1 1/2 cups
sugar, 1 3/4 cups hot water and honey to a boil in saucepan; boil 1 minute.
Stir in rind strips; bring to a boil, and boil 4 minutes. Drain well, and
let cool 10 minutes. Toss with remaining 1 cup sugar until coated. Spread
on wax paper; cool completely.
