Strawberry Rhubarb Salad

Ingredients:


4 Cups Diced Rhubarb

1 1/2 Cups Water

1/2 Cup Sugar

2 packages Strawberry Gelatin Powder

1 cup Orange Juice

1 tablespoon Grated Orange Rind

2 Cups sliced strawberries
 

Preparation / Directions:


Combine rhubarb, water and sugar; cook until tender. Pour hot rhubarb mix over gelatin and stir until completely dissolved. Add OJ and orange rind. Chill until syrupy; fold in strawberries. Pour into a 1 quart mold and chill until set. Garnish with whole strawberries with hulls if desired.
