Diabetic Cupcakes

Ingredients:


3 Cups flour

1 Teaspoon cinnamon

1 Teaspoon salt

1 Can crushed pineapple -- undrained

1 1/2 Teaspoons vanilla

3 large eggs

2 Cups diced bananas -- (about 2 large ones)

1 Teaspoon baking soda

4 Teaspoons Sweet and Low

1 1/2 Cups cooking oil
 

Preparation / Directions:


Put all ingredients in bowl. Blend do not beat. Bake at 350 degrees for 40 minutes for cupcakes; tube pan - for cake 80 minutes.
