Ingredients:
2 cans sweet potatoes or yams -- drained (16 oz.) and mashed. |
1/2 cup orange juice concentrate |
1/2 cup skim milk |
1 teaspoon vanilla |
1 teaspoon cinnamon |
2 tablespoons chopped pecans |

Preparation / Directions:
Preheat oven to 375 degrees. Spray an 11x7 baking dish with cooking spray. In a mixing bowl, combine all ingredients except pecans. Spread sweet potato mixture in prepared dish. Sprinkle pecans on top. Bake for 30 minutes. Makes 8 (3/4 cup) servings
