Spinach Bacon Salad With Ruby Dressing | ||||||||

Preparation / Directions:Chop bacon and cook in microwave or on top of stove until crisp. Drain on paper towels.
Drain plums, reserving 1/4 cup syrup. Cut plums in half, discarding pits.
To make dresing coarsely cut up 2 plums. Place in food processor with metal blade or blender and process until finely chopped. Add vinegar, oil, brown sugar, reserved plum juice and salt and pepper to taste. Mix until blended.
Cut remaining plums into bite-size pieces.
In a large bowl combine plums with spinach, onions and crumbled bacon. Add dressing and toss well.
