Red Cooked Duck

Ingredients:


4 cups chicken stock

1 cup soy sauce

2 tablespoons sugar

1/4 cup white wine

2 pieces star anise

3 slices fresh ginger root

1 tablespoons szechuan peppercorn

2 medium scallions

8 pounds duck
 

Preparation / Directions:


combine soy, stock, sugar, wine, and the sachet in a saucepot, over a moderate flame heat to a boil add the duck return to a boil, reduce heat, and simmer until duck is tender serve hot or allow to cool in the cooking liquid and serve at room temperature
