Ingredients:


1 medium globe eggplant -- peeled and cubed

2 large eggs

1/2 cup finely chopped onions

1 cup crushed soda crackers

4 ounces cheddar cheese -- grated
 

Preparation / Directions:


Preheat oven to 350øF. Prepare eggplant and cook in boiling water until just tender. Reserve 1/4 of the cheese and crackers. Combine remaining ingredients in casserole. Top with reserved cheese and crackers. Bake for 30 minutes.
