Preparation / Directions:Preheat oven to 350øF. Prepare eggplant and cook in boiling water until just tender. Reserve 1/4 of the cheese and crackers. Combine remaining ingredients in casserole. Top with reserved cheese and crackers. Bake for 30 minutes.
