Ingredients:


1 large eggplant -- peeled and cubed

1 medium Onion -- chopped

1 can cream of mushroom soup

1 cup cheddar cheese -- shredded(or more

2 tablespoons butter and vegetable oil
 

Preparation / Directions:


In skillet, melt butter with vegetable oil. Add eggplant and onion and cook until tender. Add soup and cheese and turn into a 2 quart casserole. Bake at 350F. for 30 minutes.
