Ingredients:


12 pieces english muffins -- split

24 Slices Canadian bacon or ham -- fried

24 large eggs -- poached

6 medium Avocados (3 pounds)

6 Cups hollandaise sauce
 

Preparation / Directions:


Toast muffin halves. Cover each half with 1 ounce bacon or ham, 1 egg, and 1/4 of an avocado, sliced. Top each half with 1/4 cup hollandaise sauce. Serve immediately.
