Sicilian Scrambled Eggs

Ingredients:


2 tablespoons olive oil

2 cups italian pepper

1 cup onion

2 cups red or white potato

8 large egg

2 tablespoons milk

1/2 teaspoon kosher salt

1/4 teaspoon black pepper
 

Preparation / Directions:


heat oil in a skillet, over a medium flame add the peppers, heat and stir for 5 minutes add the onions and potatoes heat and stir for another 5 minutes combine the eggs, milk, salt, and pepper beat until frothy and well blended pour into the skillet heat and stir over a low flame, until well set arrange onto a heated serving platter serve hot
