Preparation / Directions:1. In large bowl, whisk together eggs, cheese, salt and pepper until blended; stir in broccoli, onion and roasted red peppers. 2. Coat 10-inch frying pan with cooking spray and heat vegetables over medium heat. Add egg mixture. Cover and cook 8 to 10 minutes until top is set. 3. Slide onto platter.
