Swiss Chard With Tomatoes And Eggs | |||||||||

Ingredients:

Preparation / Directions: 1. Wash chard. Remove ribs and discard. Chop. Place in a large saute plan and cook with the cover on until wilted. Remove from pan. 2. Heat oil in same pan over medium heat. Add onions and garlic and saute until golden. 3. Add tomatoes and cooked chard. Cook until bubbley. 4. Make 4 small depressions in tomato/chard mixture. Break an egg into each depression. Cover and cook until eggs are set. 5. Season with salt and pepper. Sprinkle with parmesan cheese.
