Enchiladas in chipotle sauce |

Ingredients:
20 tortillas tortillas |
7 Ounces chipotle peppers |
10 Ounces Old El Paso Enchilada Sauce |
1 pound Monterrey Jack Cheese |
1 small onion - chopped in very small pieces |

Preparation / Directions:
-Shred Monterrey Jack Cheese and add finely chopped onion
-Fry tortillas in hot oil to where they are softly fried DO NOT OVER FRY.
-Add cheese to tortilla and roll and place in a casserole pan
-Add enchilada sauce in blender with half can of chipotle peppers
-Pour sauce over Enchiladas
-Spread left over cheese over enchilada sauce
-Place casserole in 350 degree oven for about 10 minutes or until cheese is melted.
-Serve hot and can be companioned with rice
