Fried Frogs' Legs

Ingredients:


2 pounds frog legs -- skinned and trimmed

1/2 teaspoon salt

1/4 teaspoon pepper

2 tablespoons lemon juice

2 tablespoons vegetable oil

1 tablespoon chopped parsley

1/2 clove garlic clove -- crushed

1 recipe fritter batter

2 tablespoons oil -- for frying

1 bunch fried parsley
 

Preparation / Directions:


In a deep bowl, combine frogs' legs, salt, pepper, lemon juice, oil, parsley, and garlic. Let stand for 1 hour. Dry legs with paper towels. Dip legs in fritter batter and deep-fry until well browned.
