Apple Fritters 1

Ingredients:


1 cup sifted all-purpose flour

2 tablespoons sugar

2 teaspoons baking powder

1/4 teaspoon salt

1 large beaten egg

2/3 cup milk

2 tablespoons butter -- melted

3 medium apples -- or 4 pared and cored (or 18 thin pineapple slices)

2 tablespoons salad oil
 

Preparation / Directions:


Sift together dry ingredients. Combine egg, milk and butter. Stir into dry ingredients until smooth; do not over beat. Slice apples crosswise into rings; dip fruit into batter one slice at a time. (Add more milk or flour, if needed, so batter coats.) In electric skillet, heat 1 inch oil to 375 degrees F. Fry fritters in oil for 3 minutes, or until brown; turn once. Drain. Serve hot. Sprinkle with confectioners' sugar. Makes
