Preparation / Directions:combine potatoes, sour cream, parsley, garlic, eggs, chives, bacon fat, dry mustard, and thyme-mix well season to taste with salt, pepper, and cayenne form into 1-inch diameter balls, dredge in flour heat oil to 375 degrees add balls in small batches and fry for 1 minute, until golden transfer to a hotel pan, keep warm repeat with remaining balls serve hot
