Queen Fruit Salad

Ingredients:


2 1/2 cup crushed pineapple -- drained

1 cup shredded coconut

1 cup cottage cheese

1 cup dairy sour cream

4 medium size unpeeled fresh peaches -- sliced or diced

8 whole unpeeled peaches

1 medium Lettuce
 

Preparation / Directions:


Mix pineapple, coconut, cottage cheese and sour cream. Chill. When ready to serve, fold in peaches. Slice a thin piece of bottom of each whole peach to make it flat to stand on plate. Cutting only to about 1/2" from bottom, cut peach into quarters. Gently separate and remove pit. Place on lettuce. Fill with cottage cheese mixture.
