Apricot Whip

Ingredients:


8 ounces apricots

3 large egg whites

1/4 cup sugar

1/4 teaspoon salt

5 teaspoons fresh lemon juice

1/2 teaspoon lemon rind -- grated
 

Preparation / Directions:


1. Cover apricots with small amount of water; bring to a simmer. Cook about 5 minutes; drain. 2. Put apricots through sieve or blender to puree. 3. Beat egg whites until stiff; fold in remaining ingredients. 4. Pour mixture into well-greased baking dish; bake in preheated 300 F. oven 45 minutes or until firm. 5. Chill well before serving.
